Pappasitos Queso is a creamy cheese dip made by melting American cheese with milk and combining it with diced onion, garlic, canned green chilies, and fresh tomato. The warm, smooth dip is perfect for serving with tortilla chips as an appetizer or snack.

Description

This queso begins by gently melting American cheese with whole milk in a saucepan, creating a rich and creamy base. Canned green chilies with their juice are added along with diced onion, garlic salt, and minced garlic. The mixture is stirred over medium heat until the onions become translucent and flavors meld. Finally, diced, seedless tomato is folded in, adding fresh texture and softness.

The result is a smooth, flavorful queso with mild heat from the chilies and a combination of creamy and fresh components. This dip suits casual gatherings and pairs well with chips for dipping.

If a thinner consistency is desired, additional milk or cream can be stirred in. For reheating, gently warm over low heat on the stovetop to prevent separation.

  • 1 1/2 pounds American cheese
  • 1/3 cup milk whole
  • 4 to 5 ounces canned green chilies with juice
  • 1/4 teaspoon garlic salt
  • 1/2 cup onion diced
  • 5 teaspoons garlic divided use, minced
  • 1/2 cup tomato seeds discarded, diced, ripe

Instructions

  1. Place the cheese and milk in a saucepan over medium heat and stir until the cheese is melted and the mixture is well blended.
  2. Add the chilies, garlic salt, onion, and 3 teaspoons of garlic. Cook and stir until the onions are translucent. Then add 2 teaspoons of garlic and cook for about 1 minute. Remove from the heat.
  3. Mix in the tomatoes and serve with tortilla chips for dipping.

Notes

  • Add extra milk or cream to adjust the queso's consistency to be thinner if preferred.
  • Reheat the queso gently in a pot on the stovetop to maintain smooth texture.
