Ingredients

  • 4 cups flour
  • 4 teaspoons baking powder Calumet brand
  • 1 teaspoon salt
  • 1-2 tablespoons butter use butter to make kosher/dairy or shortening to make kosher/vegan, or lard
  • 2 cups milk or water, more or less, enough to mix a very soft dough
  • 2 tablespoons butter melted

Instructions

  1. Sift the flour, salt and baking powder together into a large mixing bowl. 
  2. Rub shortening into the flour with fingers, a spatula, or the rounding edge of a large spoon. With a little practice, the spatula or spoon can be made to do better work than the fingers.
  3. Add milk or water, as cold as possible, mixing to form a very soft dough.
  4. Mix with a spoon or flexible knife, in preference to using a warm hand, to keep the dough as cold as possible.
  5. Turn dough on a well floured board and roll out lightly to 1/3 inch thickness. Cut with a round or oval cutter.
  6. Crease in center with the handle of a table knife first dipped in flour.
  7. Brush half of the round with melted butter and fold over.
  8. Put in a baking pan spaced 1/2 inch apart and bake at 450 degrees for 15 minutes. Serve warm with butter or jam.
