Parmesan Brussel Sprouts

Parmesan Brussel Sprouts are halved Brussels sprouts tossed with olive oil, garlic powder, Italian seasoning, and kosher salt, arranged cut side down over a layer of shredded Parmesan cheese on a parchment-lined baking sheet, then roasted until the bottoms are crisp and golden with tender interiors. This method highlights a crisp texture contrasted by the nutty, salty Parmesan base.

Description

The recipe starts by preheating the oven to 400°F and halving Brussels sprouts after removing stems. Olive oil, garlic powder, Italian seasoning, and salt coat the sprouts evenly, seasoning them for roasting. The baking sheet is prepared with parchment, sprayed with olive oil, and sprinkled with grated Parmesan cheese, providing a textured, flavorful crust under the sprouts.

Placing the Brussels sprouts cut side down close together on the cheese layer encourages caramelization and crispness on the bottom, while the oven’s heat softens the interior. This roasting takes 25 to 30 minutes, adjustable by sprout size. The resulting dish combines the natural bitterness of Brussels sprouts with the savory, umami qualities of toasted Parmesan and seasoning.

This dish works well as a side for various meals, offering a balance of crispy, tender textures and a cheesy finish without heavy sauces. The use of dried Italian seasoning and garlic powder provides an easy layering of flavor consistent with common roasted vegetable preparations.
