Parmesan Crusted Tilapia
Description
Parmesan Crusted Tilapia combines mild white fish filets with a crunchy topping made from seasoned bread crumbs and freshly grated Parmesan cheese mixed with melted butter. The crust ingredients include garlic, onion powder, kosher salt, and black pepper, which blend to enhance the delicate flavor of the tilapia while creating a textured, savory crust when baked. Baking at 400°F finishes the fish thoroughly, with a short broil at the end that deepens the crust's golden browning without burning.
The result is a fish that maintains moisture and flakiness under a crisp, flavorful crust. The baking method is hands-off and suited for an easy dinner, with flexibility to add lemon juice or a preferred sauce for serving. This recipe’s approach to breading and seasoning ensures a balanced savory taste, while the broiler step ensures a visually appealing finish.
The components used to coat the fish allow for some variations according to taste or availability: seasoned bread crumbs can be swapped with plain plus Italian seasoning or cracker crumbs, but salt adjustments would be needed accordingly.
Ingredients
- 1/2 cup seasoned bread crumbs
- 1/2 cup Parmesan Cheese , finely grated
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt coarse
- 1/2 teaspoon black pepper ground
- 3 tablespoons butter , melted
- 4 large tilapia sizing and weight may vary, filets
- lemon for serving, fresh
Instructions
- Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper. Set aside.
- In a medium bowl, combine the 1/2 cup seasoned bread crumbs*, 1/2 cup Parmesan cheese, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon coarse Kosher salt and 1/2 teaspoon ground black pepper. When mixed, drizzle in the melted 3 tablespoons butter. It will resemble wet sand.
- Place the 4 large tilapia filets onto the prepared baking sheet. Spoon the breadcrumb mixture over the top of each evenly.
- Bake the filets for 17-20 minutes. At the very end, turn on the broiler for 1 minute just to get a little browning. Watch carefully to not burn!
- Remove and serve with fresh lemon or sauce of your choice.

Notes
- You can season plain breadcrumbs with a mix of Italian seasoning if preferred instead of using pre-seasoned ones.
- Panko or crushed crackers such as Ritz or saltine crackers may be used as alternatives to breadcrumbs, but remember to reduce added salt if the substitute is salted.
