Ingredients

Servings
  • 6 lices bread large square slices
  • 3 tablespoons butter
  • 6 egg
  • parmesan to taste
  • salt to taste
  • black pepper to taste
  • parsley optional, to garnish, fresh

Instructions

  1. Create a hole in the middle of each bread slice using a cookie cutter or the top edge of a round glass.
  2. Heat 1 tbsp butter in a large skillet. Add a slice (or two if there is enough space) to the skillet. Toast the bread until golden brown and then flip over.
  3. Add an egg to the hole in the bread. Cook until the egg white is cooked and the yolk is firm but still runny inside.
  4. Remove from the pan and sprinkle several large pinches of parmesan cheese on top. Add salt and pepper to taste. Optionally, garnish with chopped parsley.

Notes

  • Storage: Egg in a hole is best served fresh.
  • Large, square pieces of white or brioche bread work best for this recipe.
  • Use a large cookie cutter or the top of a glass to cut a hole in the center of the bread. Be careful not to make the hole too large, or the bread cab become flimsy and fall apart.
