Parmesan Garlic Crash Hot Potatoes

Parmesan Garlic Crash Hot Potatoes are red potatoes roasted until tender, then gently smashed to increase surface area for extra crispness. The smashed tops are brushed with olive oil and topped with a mixture of minced garlic and freshly grated Parmesan cheese before roasting again to develop a golden, textured crust. The potatoes finish with kosher salt, black pepper, and optional parsley garnish.

Description

This recipe begins by roasting halved red potatoes cut side down until their surfaces develop a golden-brown crispness. Flipping the potatoes over, they are smashed lightly to create varied surfaces that crisp nicely during the second roast. Olive oil brushed on top helps the crust form, while the mixture of minced garlic and freshly grated Parmesan cheese adds savory depth and a nutty, salty finish.

After seasoning with kosher salt and cracked black pepper, the potatoes bake again until the topping is browned and the potatoes are tender inside with crispy edges. The dish is finished with a sprinkle of chopped fresh parsley for color and a hint of herbal brightness. These potatoes offer a satisfying combination of soft interiors with textured, flavorful crusts.

Ingredients

Servings
  • 7 red potatoes cut in half, large
  • 6 tablespoons olive oil , divided
  • 4 cloves garlic , minced
  • 3/4 cup Parmesan Cheese , I use freshly grated using a Microplane Grater
  • salt Kosher, to taste
  • black pepper Kosher, to taste
  • parsley chopped, for garnish if desired

Instructions

  1. Heat oven to 425 degrees.
  2. Drizzle sheet pan generously with three tablespoons of olive oil.
  3. Place potatoes cut side down on sheet pan.
  4. Roast for 20-25 minutes or until the cut sides are golden brown.
  5. Flip the potatoes over so the skin side is down.
  6. Using a potato masher, press down each potato until smashed but not completely flattened.
  7. The more varied the top is, the more nooks and crannies that can brown in the second half of cooking.
  8. Brush tops of mashed potatoes with the remaining olive oil.
  9. In a small bowl mix the garlic and Parmesan cheese then add them to the top of the potatoes.
  10. Add Kosher Salt and fresh cracked black pepper to taste.
  11. Bake for an additional 20 minutes.
  12. Garnish with chopped parsley or additional Parmesan cheese if desired.
