Description
This recipe bakes large potatoes whole at 400°F (200°C) until fully cooked and easily pierced with a knife, about an hour. After cooling slightly, the potatoes are halved and the insides scooped out, leaving the skins behind. The potato flesh is mashed manually or with a ricer to achieve desired texture.
Meanwhile, milk, minced garlic, salt, pepper, and butter are heated together until just simmering, releasing the garlic aroma and melting the butter. This mixture is then poured into the mashed potatoes to infuse creaminess and flavor. Finally, grated Parmesan cheese is stirred in, adding a savory depth and gentle sharpness to the mash.
The result is a creamy, flavorful mash with gentle garlic notes balanced by the nutty cheese, suitable as a side for many dishes. Seasoning can be adjusted to taste before serving.
Ingredients
- 8 large potato
- ¾ cup milk (full cream / whole milk)
- 2 garlic minced, cloves
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp butter
- ½ cup Parmesan Cheese grated
Instructions
- Preheat the oven to 200°C/400°F and place the potatoes onto a sheet pan. Place in the oven and allow to bake for an hour or until a knife can easily be inserted.
- When the potatoes are cooked, remove from the oven and allow to cool for 10 minutes. Carefully halve the potatoes. Scoop out the cooked flesh and discard the skins.
- Mash the potatoes with a potato masher or ricer.
- Heat the milk, garlic, salt, pepper and butter together until the milk starts to simmer. Remove from the heat and pour into the potatoes. Mix well.
- Stir in the Parmesan cheese then season to taste and serve.
