Ingredients

  • 2 pounds red potatoes cut into 1 inch pieces
  • 2 tablespoons olive oil
  • ½ cup Parmesan Cheese grated
  • 3 garlic minced cloves
  • 1 tablespoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • aluminum foil
  • parsley chopped, for garnish
  • Parmesan Cheese freshly grated

Instructions

  1. In a large bowl add 2 pounds red potatoes, cut into 1 inch pieces , 2 tablespoons olive oil, ½ cup grated parmesan cheese, 3 minced garlic cloves, 1 tablespoon Italian seasoning, ¼ teaspoon salt and ¼ teaspoon pepper. Toss until coated.
  2. On a sheet of aluminum foil add the potatoes. Fold in the sides to create a foil pack and seal the edges. Place on the grill on medium high heat and grill for 20-30 minutes or until tender.
  3. Top with chopped parsley for garnish and freshly grated parmesan cheese.
