Description

The recipe begins by trimming and quartering medium zucchinis lengthwise. They are tossed in olive oil, lemon juice, Italian seasoning, salt, and black pepper to infuse bright and herbal flavors. Grilled on direct medium-high heat, the zucchini develops light charring over 4-5 minutes per side, softening the flesh and concentrating flavors.   • 3 zucchini medium
  • 1 Tablespoon olive oil
  • 1/2 lemon (juiced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup Parmesan Cheese grated

Instructions

  1. Preheat the grill over medium high heat (approximately 400 degrees Fahrenheit). 
  2. Trim off the ends of the zucchinis and cut it into quarters lengthwise. 
  3. Place the zucchini in a large mixing bowl.  
  4. Top the zucchini with olive oil, lemon juice, Italian seasoning, salt and pepper. Gently toss to coat the zucchinis in the seasonings and oil. 
  5. Place the zucchini spears directly on the grill over direct heat.  Cook for 4-5 minutes until the zucchini is slightly charred.  Flip and grill for 3-4 more minutes on the opposite side until the zucchini is tender. 
  6. Remove from the grill and place on a serving plate. 
  7. Top with the grated parmesan cheese evenly over the zucchini. 
  8. Let the zucchinis sit for a few minutes for the cheese to melt slightly and then the zucchini is ready to serve and enjoy!
