Parmesan Popovers With Pesto Sauce

Parmesan Popovers with Pesto Sauce are light, airy baked batter cups flavored with grated Parmesan cheese and basil walnut pesto. The batter is blended smooth and baked at a high temperature to create tall, puffed popovers with a crisp exterior and soft interior. The pesto adds herbaceous, nutty notes blended through the batter for savory flavor.

Description

This recipe uses a batter of eggs, milk, and flour blended to smoothness, then combined with Parmesan cheese and a pesto made from basil and walnuts. The popover pan is preheated in a hot oven to ensure a strong rise. After pouring the batter into greased cups halfway, the popovers bake first at 450°F to puff and form a crust, then the temperature is lowered to 350°F to finish baking evenly without burning. Baking times total about 30-35 minutes. The finished popovers have a golden, lightly browned surface with a tender crumb inside. These popovers can be served as an appetizer, side, or with meals that benefit from a savory bread option. The inclusion of pesto in the batter distinguishes these popovers with an herbal, nutty flavor profile.
