Parmesan Potatoes

Parmesan potatoes are baked potato rounds that are coated with a crisp, buttery coating.

Ingredients

  • 1/3 cup butter melted
  • 1/3 cup all-purpose flour
  • 1/3 cup Parmesan Cheese grated
  • salt to taste
  • black pepper to taste
  • 6 russet potato each sliced into 1/2-inch rounds, medium
  • Italian seasoning to taste

Instructions

  1. Preheat oven to 375 F.
  2. Pour butter into a jelly roll (10x15-inch) pan.
  3. Combine flour, parmesan, salt, and pepper in a resealable bag.
  4. Add 2-3 slices of potato to bag, and shake to coat with the flour mixture.
  5. Place coated potatoes in a single layer in the butter in the pan.
  6. Sprinkle any remaining parmesan over potatoes.
  7. Bake for 30 minutes.
  8. Flip potatoes over, and sprinkle with Italian seasoning.
  9. Continue baking an additional 15-20 minutes, or until tender.

Notes

  • Butter: I use salted butter.
  • Salt: Since I use salted butter and parmesan cheese is on the saltier side, I use very little salt in the coating (about 1/4 teaspoon). You can feel free to omit the salt or use more salt according to your tastes. 
  • Pepper: I usually use about 1/2 teaspoon of salt. 
  • Potatoes: There's no need to peel the potatoes before use.
