  • 3 tablespoons olive oil
  • 1 clove garlic fresh, minced
  • ½ teaspoon lemon optional, zest
  • salt to taste
  • black pepper to taste
  • 1 ounce Parmesan Cheese fresh, grated

Instructions

  1. Preheat oven to 450°F.
  2. Zest lemon. Toss broccoli with olive oil, garlic, lemon zest if using, and salt & pepper ensuring all pieces are well coated. 
  3. Line a pan with foil and spray with cooking spray. Spread broccoli evenly over pan and roast about 10 minutes or just until tender crisp.
  4. Remove from oven, place in a bowl and immediately toss with parmesan cheese. Serve hot.

Notes

  • Cut broccoli into uniformly sized florets so they cook evenly during roasting.
  • Make sure broccoli is fully dried before coating with oil and seasonings to prevent steaming and promote caramelization.
  • Roasting at 450°F brings out a flavorful browned crust on the broccoli edges.
