Parmesan Roasted Broccoli
Description
Parmesan Roasted Broccoli prepares broccoli florets by tossing them in olive oil, fresh minced garlic, salt, pepper, and optional lemon zest. The broccoli is spread evenly on a foil-lined pan and roasted at 450°F until tender yet crisp, roughly 10 minutes. Immediately after roasting, freshly grated Parmesan cheese is tossed into the hot broccoli, coating the florets with a savory finish. The high roasting temperature encourages caramelization, enhancing the natural flavors of the broccoli and garlic.
The texture achieved balances a slight crispness with tender centers, while the Parmesan adds a rich, slightly salty dimension. The use of lemon zest brightens the dish subtly without overpowering it. This side matches well with roasted or grilled meats and can liven up a weeknight dinner plate.
To get the best results, ensure all broccoli is uniformly sized and very dry before roasting to avoid steaming. High heat roasting promotes browning and flavor development. Leftover lemon zest can be frozen in small portions for future use in dressings or sauces, extending the utility of the fresh citrus.
Ingredients
- 1 pound broccoli washed and well drained, florets
- 3 tablespoons olive oil
- 1 clove garlic fresh, minced
- ½ teaspoon lemon optional, zest
- salt to taste
- black pepper to taste
- 1 ounce Parmesan Cheese fresh, grated
Instructions
- Preheat oven to 450°F.
- Zest lemon. Toss broccoli with olive oil, garlic, lemon zest if using, and salt & pepper ensuring all pieces are well coated.
- Line a pan with foil and spray with cooking spray. Spread broccoli evenly over pan and roast about 10 minutes or just until tender crisp.
- Remove from oven, place in a bowl and immediately toss with parmesan cheese. Serve hot.
Notes
- Cut broccoli into uniformly sized florets so they cook evenly during roasting.
- Make sure broccoli is fully dried before coating with oil and seasonings to prevent steaming and promote caramelization.
- Roasting at 450°F brings out a flavorful browned crust on the broccoli edges.
- Reserve any leftover fresh lemon zest by freezing in ice cube trays for adding citrus flavor to other dishes later.
