Parmesan Roasted Cauliflower
Description
This recipe starts by slicing cauliflower into florets and tossing them evenly with melted butter and olive oil, which helps to promote browning and adds richness. Salt and ground black pepper season the cauliflower before roasting on a sheet pan at 400°F (207°C) for about 20 to 30 minutes, allowing the vegetable to nearly reach tenderness with a slight roasted texture.
Once the cauliflower is almost cooked through, grated Parmesan cheese and chopped parsley are sprinkled over the florets, and the dish returns to the oven for about 5 more minutes. This additional roasting melts the cheese, forming a light crust that adds savory flavor complexity and texture contrast to the tender cauliflower.
The finished cauliflower is suitable as a side dish to complement various meals, providing richness from the butter and olive oil, a slightly crunchy cheese topping, and fresh herbal notes from parsley.
Ingredients
- 8 oz. (230g) cauliflower sliced horizontally, florets
- 2 tablespoons butter melted
- 1 tablespoon olive oil
- 1 pinch salt
- 3 dashes black pepper ground
- 1/2 cup Parmesan Cheese shredded
- 1 teaspoon parsley chopped leaves
Instructions
- Preheat the oven to 400°F (207°C). Toss the sliced cauliflower with butter and olive oil. Season with salt and black pepper. Transfer the cauliflower to a baking sheet in a single layer and roast until almost tender, about 20-30 minutes.
- Remove from the oven and sprinkle the grated Parmesan and chopped parsley over the cauliflower. Roast again until the cheese melts and becomes slightly crusty, about 5 minutes. Remove from the oven and serve immediately.
