Description
This parsley sauce starts by gently sautéing minced onion in melted butter to develop subtle sweetness, followed by whisking in flour to create a roux base. Milk and white wine are added gradually with fresh minced parsley and a touch of French mustard, nutmeg, salt, and pepper to develop depth of flavor. Continuous whisking prevents lumps and helps the sauce thicken smoothly over several minutes.
The resulting sauce has a velvety texture with mild onion and herb flavors highlighted by the brightness of wine and an earthy note from mustard and nutmeg. It can complement fish, chicken, vegetables, or potatoes, lending a fresh, creamy dimension without overpowering the main components.
Ingredients
- 2 tablespoons butter unsalted
- 2 tablespoons all-purpose flour
- 1 cup milk whole
- ½ cup white wine
- 3 teaspoons parsley minced, fresh, Italian, flat leaf
- 1 tablespoon onion minced
- ½ teaspoons mustard French
- nutmeg a pinch
- salt
- black pepper
Instructions
- Melt the butter in a small saucepan over medium heat. Add the minced onion to the butter and gently saute until translucent for about 1 minute.
- Cook for about 1 minute, then whisk in the flour and cook for another 1 minute.
- Add the white wine, milk, parsley, mustard, pinch of nutmeg, salt and pepper to taste and whisk all teh ingredients together until smooth.
- Cook for another 5 minutes whisking constantly until teh sauce thinckens.
