Parsley Sauce

Parsley Sauce is a smooth, creamy sauce made by combining a butter-onion roux with milk, white wine, fresh parsley, mustard, and seasoning. The sauce thickens gently while whisking until it reaches a pourable consistency, offering a mild herb-infused flavor and a versatile accompaniment for various dishes.

Description

This parsley sauce starts by gently sautéing minced onion in melted butter to develop subtle sweetness, followed by whisking in flour to create a roux base. Milk and white wine are added gradually with fresh minced parsley and a touch of French mustard, nutmeg, salt, and pepper to develop depth of flavor. Continuous whisking prevents lumps and helps the sauce thicken smoothly over several minutes.

The resulting sauce has a velvety texture with mild onion and herb flavors highlighted by the brightness of wine and an earthy note from mustard and nutmeg. It can complement fish, chicken, vegetables, or potatoes, lending a fresh, creamy dimension without overpowering the main components.
