Passion fruit hot sauce {Ají de maracuya}
Description
This hot sauce starts by boiling spicy peppers (such as Ecuadorian red ají, Peruvian ají Amarillo, or alternatives like Fresno chiles or habaneros) to soften them. After cooling, the skins and seeds are removed to reduce bitterness and control heat intensity. The peeled peppers are then blended with passion fruit juice, lime juice, and a light oil such as olive or avocado oil until smooth.
The resulting sauce offers a balance of fiery pepper heat, fruity passion fruit acidity, and citrus freshness from the lime. Optional chopped cilantro can be stirred in for an herbaceous note. Salt is added to taste to round out the flavors.
This hot sauce works well as a condiment to brighten grilled meats, seafood, or other dishes requiring a fruit-forward spicy kick. Its smooth texture makes it easy to drizzle or mix into recipes needing extra flavor and heat.
Ingredients
- 4-5 hot pepper use Ecuadorian red aji peppers or Peruvian aji Amarillo, can also use red fresno chiles or habaneros as a backup, or ajies
- 1 ½ cup passion fruit juice pure or concentrate
- 1/3 cup olive oil light, or avocado oil
- lime juice of 1
- salt to taste
- cilantro finely chopped, optional
Instructions
- Boil the ajies or hot peppers for about 10-15 minutes.
- Place the hot peppers in cold water to cool down.
- Remove the skins and the seeds/veins.
- Blend the peeled ajies with the passion fruit juice, light olive or avocado oil, and lime juice until you have a smooth sauce.
- Mix in the finely chopped cilantro (if using).
- Add salt to taste.
