Passover Spinach Artichoke Dip

A Kosher for Passover dairy spinach artichoke dip topped with browned, melted cheese. A simple appetizer to serve to guests during the holiday.

Ingredients
- 28 ounces Artichoke 2 cans, baby, rinsed, drained, and chopped
- 1 cup spinach frozen, cooked, chopped, thawed and squeezed dry
- 1 cup Greek yogurt plain, Greek-style (e.g., Fage
- 1/2 cup mozzarella cheese shredded, plus extra for topping
- 1/2 cup Parmesan Cheese shredded
- 1/2 cup Romano cheese
- 1/2 cup Asiago cheese
- 3-5 cloves garlic pressed, or 2 tsp garlic powder (not garlic salt
- 1/4 teaspoon black pepper freshly ground
Instructions
- Preheat oven to 350F. In a large bowl, combine all ingredients, except the extra mozzarella, and mix well.
- Scoop into a casserole dish, and bake, covered, for 40-50 minutes, until the mixture is hot and bubbly.
- Remove from the oven and turn on the broiler. Sprinkle a thin layer of mozzarella on top, and then place back in the oven, uncovered, for about 5-8 minutes, until the cheese is nicely browned. Remove from the oven and serve while still warm... with matzo, of course!
