Description
Pasta Aligue uses cooked spaghetti mixed with a sauce made from crab fat (aligue), garlic, onion, olive oil, and cream. The shrimp are cooked separately in oil, then the sauce is prepared by sautéing aromatics and simmering with crab fat and cream. A squeeze of kalamansi or lemon juice brightens the rich sauce, which is then combined with the pasta to coat it evenly. The dish is finished by topping it with the cooked shrimp and a generous sprinkling of Parmesan or hard cheese.
The sauce is creamy and savory, with umami notes from the crab fat balanced by citrus acidity. The shrimp add a tender, sweet seafood component, while the cheese adds a mild sharpness. This pasta can be served as a main course and pairs well with simple sides or a light salad.
Ingredients
- 8 oz spaghetti or any pasta) - cooked according to package instructions
- ½ pound Shrimp or mixed seafoods) - shelled and deveined
- ½ cup crab fat adjust as desired, also known as aligue
- 3 tablespoons olive oil or vegetable oil
- 2 cloves garlic - minced
- 1 medium onion - chopped
- 2 tablespoons kalamansi juice or lemon juice
- ½ cup all-purpose cream or heavy cream
- salt to taste
- black pepper to taste
- 3 tablespoons Parmesan Cheese or hard cheese, grated
Instructions
- In a saucepan, heat oil in medium high then stir in the shrimps until cooked. Remove shrimps but leave the oil.
- In the same pan, saute garlic and onion just until tender. Add the aligue (crab paste) and cream and stir to combine. Let it simmer for 3-5 minutes. Add the lemon or kalamansi juice. Season with salt and pepper.
- Toss in the precooked pasta and mix well. Transfer to your serving dish. Top with shrimps and sprinkle with grated parmesan or hard cheese before serving.
