Description

Ingredients
For the Pasta Chips
- 8 ounces rigatoni pasta
- 1 tablespoon olive oil
- 3 tablespoons Parmesan Cheese freshly grated
- ½ teaspoon Italian seasoning
- ½ teaspoon garlic powder
- kosher salt
- black pepper
For the Whipped Feta Dip
- 4 ounces feta cheese crumbled
- 2 ounces Greek yogurt
- 1 garlic clove
- 2 tablespoons olive oil
Instructions
- Bring a large pot of heavily salted water to a boil. Cook pasta al dente according to package directions and drain.
- Toss the pasta with olive oil, parmesan cheese, Italian seasoning, garlic powder, salt and pepper.
- Air fry at 400°F for 12-15 minutes, tossing a couple times.
- Make the Dip. Add crumbled feta to a food processor and pulse to create small crumbs. Add in Greek yogurt and garlic and blend while streaming in the olive oil until the feta is creamy, 4-5 minutes, scraping down the sides as necessary.
- Serve the pasta chips with the whipped feta dip.
Notes
- For best texture, eat pasta chips shortly after preparation.
- Store leftovers at room temperature in an airtight container for up to 5 days while retaining crunch.
