  • 10 tomatillos ~1 lb, roasted or grilled
  • 1-2 garlic roasted or grilled, heads
  • 2-3 green onions
  • 2 avocado ripe
  • ½ cup olive oil
  • 1 cilantro small bunch
  • 2 lime juiced, small
  • salt to taste

For the avocado pastas:

  • 2 lbs spaghetti cooked according to package instructions or your preference, or your choice of pastas
  • queso fresco crumbled or cotija cheese
  • green onion chopped
  • avocado optional, additional, diced or sliced
  • cilantro leaves

Instructions

  1. Combine all the ingredients for the spicy avocado sauce in the blender.
  2. Blend until you have a smooth sauce.
  3. The sauce can be served immediately or refrigerated until needed. Stir and let it return to room temperature when serving.
