  • 8 ounces cream cheese at room temperature
  • 1 cup heavy cream
  • ¼ cup mascarpone cheese
  • ½ cup Swerve Confectioners Sugar
  • ½ teaspoon  vanilla extract
  • strawberries
  • blueberries

Instructions

  1. Whip the heavy cream in a bowl to soft peaks.  In a separate bowl, add the cream cheese and whip using a hand mixer.  Mix in the mascarpone, swerve confectioners and vanilla extract.
  2. Then mix in the whip cream and blend until smooth and creamy.Add a layer of chopped strawberries to the bottom of a dessert glass.
  3. Pipe or dollop the cheesecake mousse over the strawberries. Add some blueberries over the top.  These can be served in the glass or cup of your choice.

Notes

  • Mascarpone cheese adds creaminess without extra flavor; substitute with more cream cheese if unavailable.
  • Adjust the number of servings based on cup size as this recipe can serve around six or more.
  • Macros do not include berries; account for them separately when tracking nutrition.
