The dish can be prepared quickly in an Instant Pot set to sauté mode and then cooked briefly under pressure, or on the stovetop by sautéing the cabbage and spices in oil and cooking covered until tender but still retaining a slight bite. The seasoning includes cumin seeds, ground turmeric, red chili powder (or chopped green chili), and kosher salt. Combining these spices with oil and the natural sweetness of cabbage gives a mild but aromatic flavor profile.

Ingredients

  • 1 lb green cabbage
  • 2 tablespoons moong dal optional
  • tablespoons neutral cooking oil generic cooking oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon Turmeric ground
  • ½ teaspoon red chili powder or 1 small green chili chopped
  • 1 teaspoon kosher salt
  • 3 tablespoons water
  • ¼ cup cilantro finely chopped for garnish

Instructions

Optional Step:

  1. Soak the mung dal in ¼ cup of hot water while you prep the cabbage

Prep cabbage

  1. Cut the head of cabbage in half. Then take one half and place it with the flat side down on the cutting board and thinly slice the cabbage into long strips. Then cut the strips in half. Chop about 6 cups of cabbage

Instant Pot Recipe

  1. Set the Instant Pot to saute mode and heat oil. Add cumin seeds and allow them to sizzle. Turn Saute off. Add turmeric, red chili powder, and cabbage. Add salt and mix. Add water and layer the soaked dal on top. NOT: Do not mix as the dal can stick to the bottom of the pot.
  2. Close the lid and cook for 1 minute followed by quick release. Press cancel and open the Instant Pot. Mix well and garnish with cilantro

Stove Top Recipe

  1. In a large nonstick pan heat oil. Add cumin seeds and allow them to sizzle. Add turmeric, red chili powder and cabbage, salt, and soaked mung dal. Mix well and cook covered with the lid on for 5 minutes on medium heat
  2. After 5 minutes taste and if the texture is good for you, turn the heat off and enjoy the cabbage. If you like it cooked soft, mix well and cook covered for another 5 minutes

Notes

  • Cabbage can be chopped finely for a soft texture or coarsely to retain some crunch according to preference.
  • The red chili powder is optional and can be replaced with chopped green chili or omitted for less heat.
  • This recipe adapts well to variations such as adding green peas, diced potatoes, shredded carrots, or diced tomatoes.
  • Using red or savoy cabbage instead of green is also possible with similar cooking times.
  • Moong dal is optional but adds texture and protein when included.
