Description

Pea Hummus uses canned chickpeas combined with fresh or frozen peas, tahini, lemon juice, garlic, salt, and pepper to create a dip with a vibrant green tint and a fresh flavor twist on classic hummus. The chickpeas are drained but the reserved liquid (aquafaba) is used for blending, allowing control over consistency and richness with no added oils. Thawing peas under hot water before blending helps integration into the smooth texture.

  • 400 g chickpeas garbanzo beans, 15 oz can, not drained
  • 150 g peas fresh or frozen, 1 cup
  • 2 tablespoon tahini
  • 2 teaspoon lemon juice
  • 1 clove garlic minced
  • Pinch salt
  • Pinch black pepper

Instructions

  1. Drain the chickpeas over a bowl to collect the liquid (aquafaba), then add the chickpeas to a blender or food processor.
  2. Run the frozen peas under hot water to thaw, then also add them to the blender, along with the tahini, lemon juice, garlic salt and pepper as well as 4 tablespoon of the aquafaba.
  3. Blend for a few minutes until thick and creamy. You may need to scrape the sides down periodically. Add a little more aquafaba if necessary to get it a thick and creamy consistency.

Notes

  • Use the chickpea liquid (aquafaba) to adjust the hummus thickness without adding extra oil or water.
  • Run frozen peas under hot water briefly to thaw for easier blending.
