Pea Salad

Pea salad combines frozen peas with crunchy roasted peanuts, celery, crumbled bacon, and red onion, all tossed in a zesty mixture of mayonnaise and Italian dressing. The salad offers a variety of textures from the crisp vegetables and nuts to the creamy dressing and smoky bacon. It can be served chilled as a side dish and benefits from adding bacon just before serving to maintain its crispness.

Description

This Pea Salad features frozen peas mixed with dry roasted peanuts, chopped celery, crispy cooked and crumbled bacon, and diced red onion. The salad is dressed with a combination of mayonnaise and prepared zesty Italian dressing, providing creaminess and tang. The salad is tossed together and chilled before serving to marry the flavors while maintaining fresh vegetable crunch.

The salad balances sweet peas and savory bacon with crunchy peanuts and celery, while the zesty dressing ties the components together. The preparation avoids cooking on the stove, relying on mixing and chilling. Adding bacon at the end keeps it crisp for texture contrast.

Pea salad serves well as a side for barbecues, picnics, or casual meals, offering a refreshing yet hearty accompaniment.

Ingredients

Servings
  • 2-1/2 /2 cups peas about 13 ounces, frozen
  • 1 cup peanuts dry roasted
  • 1 cup celery chopped
  • 6 Bacon cooked and crumbled, strips
  • 1/4 /4 cup onion red, chopped
  • 1/2 /2 cup mayonnaise
  • 1/4 /4 cup Italian salad dressing prepared, zesty

Instructions

  1. In a large bowl, combine the first five ingredients. In a small bowl, mix mayonnaise and salad dressing and toss with salad. Refrigerate until serving. If making ahead of time, don't add the bacon. Store separately and toss in before serving to keep crispy.

Notes

  • For extra crunch, add the bacon just before serving instead of mixing it in advance to keep it crispy.
  • The salad can be prepared in advance but refrigerate separately from bacon and add bacon when serving.
  • Using partially thawed peas adds extra crisp texture, though fully thawed peas also work well.
