Ingredients
- 1 tbsp olive oil
- 1 tbsp vegetable oil
- 1 tbsp aged balsamic vinegar
- 1 tsp Dijon mustard
- ½ tsp honey
- Sea Salt and Freshly Cracked Pepper to taste
- mixed greens I used a baby kale, arugula, and radicchio mix
- 1-2 peaches sliced
- burrata cheese ripped into bits, to taste
- balsamic glaze to taste

Instructions
- Whisk the olive oil, vegetable oil, balsamic vinegar, dijon mustard, honey, sea salt, and freshly cracked pepper, to taste, in a large salad bowl.
- Add the mixed greens to the bowl then toss to coat evenly.
- Top with peach slices and bits of the burrata cheese.
- Drizzle the top with a touch of balsamic glaze, to taste.
- Season with a touch of sea salt and freshly cracked pepper, to taste, if desired. Serve immediately. Enjoy.
