Peach Blueberry Baked Oatmeal

Peach Blueberry Baked Oatmeal is a hearty breakfast casserole combining rolled oats, vanilla plant protein powder, fruit, and warm spices. The mix includes almond milk, applesauce, peanut butter, and eggs for moisture and binding. Fresh peaches and blueberries provide natural sweetness and a juicy texture, while cinnamon and vanilla enhance flavor. Baking results in a soft, sliceable oatmeal that's filling and fruit-forward.

Description

This baked oatmeal starts by mixing rolled oats and vanilla protein powder with baking powder, cinnamon, and salt. Wet ingredients including almond milk, applesauce, peanut butter, eggs, and vanilla extract are stirred in to form a thick batter. Chopped peaches and blueberries are folded or layered on top before baking until just set and browned lightly. The texture is moist but firm enough to cut into squares.

The optional blueberry syrup, made by simmering blueberries with maple syrup and lemon juice, adds a sweet and tangy sauce on the side. This dish makes a nutritious and satisfying breakfast or snack, with protein and fruit combined for balance.

The oatmeal can be portioned into six servings and reheated as needed. The combination of flavors and textures provides a warming start to the day.
