Peach Bread Recipe
Description
Peach Bread Recipe creates a quick bread that balances sweetness from sugar and peaches with a tender, moist texture from milk, oil, and eggs. The batter includes all-purpose flour with baking powder for leavening, folded gently with diced fresh peaches to maintain fruit pieces that add bursts of flavor within the crumb.
Baked in a greased loaf pan at 350ºF, the bread is checked with a toothpick to ensure doneness and cooled before glazing. The glaze is a thick mix of powdered sugar, melted butter, diced peaches, and vanilla extract. Adjusting with heavy cream or milk controls drizzle consistency and enhances the peach profile atop the cooled bread.
The bread is stored in an airtight container in the refrigerator to preserve freshness. It slices well and offers a lightly sweet, fruity option for breakfast or a casual dessert.
The glaze thickens as it rests because the sugar draws juices from the peaches, so adding liquid should be gradual to avoid thinning too much. This bread yields about 10 slices with estimated calories based on full glaze usage.
Ingredients
For the Bread:
- 3/4 cup granulated sugar 150 grams
- 1/2 cup milk 4 ounces, 2%
- 1/2 cup canola oil (vegetable or coconut oil)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour 260 grams
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups peach diced, fresh
For the Glaze:
- 2 cups powdered sugar
- 2 tablespoons butter melted
- 1/3 cup peaches peeled and drained of any extra juice, finely diced
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons heavy cream optional, or milk
Instructions
- Preheat the oven to 350ºF.
- In a medium bowl, stir together the sugar, milk, oil, egg and vanilla.
- In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
- Fold the peaches gently into the batter.
- Pour the bread batter into a greased 9"x5" bread pan. Bake at 350ºF for 55-60 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
- To make the glaze, combine the powdered sugar, melted butter, diced peaches and extract in a small bowl. Mix until it is smooth. Add heavy cream only if needed to get the glaze to a drizzle consistency.
- Once the bread is cool, spread the glaze on top of the bread. Slice and serve.
- Store the bread in an airtight container in the refrigerator.
Notes
- The glaze thickness depends on peach juiciness; add heavy cream or milk one tablespoon at a time to achieve a drizzle consistency.
- The sugary glaze will soften over time as it draws juices from the peaches; avoid adding excess liquid initially.
- Calorie estimates are based on ten slices with full glaze applied and may vary by ingredient brands.
- Store the finished bread in an airtight container in the refrigerator to maintain freshness.
