Vanilla Cake

  • ½ cup butter melted, unsalted
  • 1 cup white sugar
  • 1 ¼ cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 tsp vanilla extract
  • 1 large egg
  • ¾ cup buttermilk

Peach Layer

  • 4 cups peach sliced
  • ¾ cup white sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice or water
  • 1 tablespoon white sugar

Instructions

  1. Heat the oven to 350F degrees.

Vanilla Cake Layer

  1. Pour the butter into the bottom of a 9x13 inch baking pan.
  2. In a medium bowl whisk together the sugar,  flour, baking powder, & salt.
  3. Stir in the vanilla extract, egg & buttermilk.
  4. Spoon/ pour the batter into the pan. Try to avoid too much butter pooling around the edges. 

Peach Layer

  1. In a large bowl toss together the sliced peaches, 3/4 cup sugar, cinnamon, cornstarch & lemon juice.
  2. Spoon the peaches on top of the cake layer. Do not mix.
  3. Bake the cobbler for 35-45 minutes, or until the top is golden brown. 
  4. Remove from the oven, and optionally sprinkle the top with 1 more tablespoon of white sugar.
  5. Serve with vanilla ice cream.
