Peach Compote Recipe
Description
The Peach Compote Recipe uses ripe peaches diced and simmered with maple syrup and lemon juice for about five minutes. The simmering softens the peaches while keeping recognizable pieces intact and starts thickening the liquid into a syrup. Adjusting simmer time controls the consistency, allowing either a chunky compote or a more saucy texture. The bright acidity from the lemon juice enhances the peach flavor and preserves color.
Once slightly cooled, the compote can be spooned over yogurt, pancakes, ice cream, or toast, providing a fresh seasonal topping. It can also be transferred to sterilized jars for refrigerated storage and keeps for up to five days.
For a smoother texture and lighter color when canning, peeling the peaches before cooking is recommended. To peel easily, score an X on the peach bottoms, blanch briefly in boiling water, then plunge in cold water to loosen skins.
Ingredients
- 4 ripe peaches diced - see notes
- ¼ cup maple syrup
- 1 tablespoon lemon juice
Instructions
- Dice the peaches then add them, the maple syrup, and the lemon juice to a small pot.
- Bring the pot to a simmer of medium-high heat. Continue to simmer the peaches, uncovered and stirring occasionally, for 5 minutes. The peaches should be soft but still in distinct pieces and the liquid starting to thicken a little - it will thicken more as it cools. If you'd prefer more of a sauce, continue to simmer the peaches until they've broken down as much as you'd like.
- Let the peaches cool slightly before you serve them. Or transfer the hot peach compote to sterilized jars for canning. This compote will keep well for up to 5 days in your fridge.
Notes
- Leaving the peach skins on creates a rustic texture and appearance in the compote.
- To peel peaches for a smoother compote, blanch them in boiling water for one minute, then cool in ice water to easily remove skins.
- If canning, peeling is advised to prevent the compote from darkening over time.
