Peach Crisp. Fresh sweetened peaches with a brown sugar oat crumble topping with creamy vanilla ice cream. The perfect summer dessert!

Ingredients
- 4 cups fresh peaches (about 3 lbs. peeled and sliced)
- 2 Tablespoons sugar
- 1 Tablespoon cornstarch (or Flour)
- 1/2 Tablespoon fresh lemon juice
Brown Sugar Crumble:
- 1/3 cup rolled oats
- 3/4 cup flour
- 1/2 cup brown sugar
- 1/2 cup sugar
- 8-10 Tablespoons cold salted butter (cut into cubes)
Instructions
- Heat oven to 350 degrees. Place sliced peaches, sugar, cornstarch, and lemon juice in a bowl. Toss to coat.
- In a small bowl, mix oats, flour, brown sugar, and sugar. Cut in cold butter with a fork or pastry cutter until it is combined. You may have chunks of butter and that is okay as the butter will melt in the oven.
- Place peaches in a 9-inch baking dish. Top with brown sugar oat crumble. Bake for 20-26 minutes or until crumble is melted and starts to bubble. Serve warm with vanilla bean ice cream.

Notes
- If you want a crispier crumble, use 8 Tablespoons of Butter. If you want a softer, buttery crumble, use 10 Tablespoons of Butter.
