Ingredients

Servings

Tea

  • 5 green tea tea bags
  • 5 c. water divided
  • 2 peach peeled, or 3 medium peaches peeled, large

Simple Syrup

  • 1/2 c. water
  • 1/2 c. honey

Instructions

Simple Syrup

  1. Add water and honey to a small saucepan and heat over med-low heat, stirring constantly. Pull off the heat once the honey has dissolved and allow to cool.

Green Tea

  1. Heat 3 cups of water to a boil. Once boiling, take off the heat and add the tea bags to the water. Allow to steep for at least 1 hour.

Iced Tea

  1. Once the tea has steeped, puree the peaches and 1 cup of water together.
  2. Strain the peach puree mixture through a fine mesh strainer in order to remove any extra pulp.
  3. In a large pitcher, combine simple syrup, tea peach puree, and remaining 1 cup of water. Stir until combined.
  4. Add in sliced peaches, lemon wedges, and/or mint, if desired.
  5. Chill in the fridge for 3-4 hours, or serve with ice.

Notes

  • Use the sweetest, fresh peaches you can find so you have a ton of flavor. Essentially, that sweeter the peach, the more flavorful the tea.
  • A quick trick to make peaches easier to peel is to blanch them. Simply bring a large pot of water to a boil. Score the bottom of each peach with an X, then place in boiling water for 2-3 minutes. Make sure each peach is completely covered in water, if your pot is smaller do this in batches. After the time is up, remove from water with a slotted spoon and immediately rinse with cold water or place them in a cold water bath. Then peel with a paring knife once they are cool to the touch.
  • In a pinch you could also use frozen or canned peaches, just make sure they aren’t already sweetened. If they are adjust your simply syrup to reflect that.
  • You can substitute maple syrup for the honey if you prefer that in your simple syrup.
  • Make sure you steep the green tea for at least a hour. Green tea can be a little more subtle in flavor, so it does need to steep for a significant amount of time.
