Ingredients

  • 2 cups rolled oats old-fashioned
  • 2 1/4 cups almond milk unsweetened or other preferred milk
  • 1/3 cup maple syrup
  • 2 tablespoons coconut oil melted
  • 1 teaspoon cinnamon
  • 2 tablespoons Flaxseed ground
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch salt
  • 3 peach 2 chopped and one sliced for topping, divided or 1 cup of each, medium ripe
  • 1/4 cup almond chopped, raw

Instructions

  1. Preheat the oven to 350ºF. In a baking dish, add oats, cinnamon, chia seeds, ground flaxseeds, salt, and baking powder. Mix to combine.
  2. Next, add almond milk, vanilla extract, maple syrup, coconut oil, salt and 1 cup chopped peaches. Mix everything to combine.
  3. Top with sliced peaches. Bake for 45-50 minutes, or until the top is golden. Over the last 10 minutes of baking, sprinkle with the chopped almonds.
  4. Remove the baked oatmeal from the oven and let it sit for 5-10 minutes to allow to cool before slicing into servings.
  5. Serve baked oatmeal with a drizzle of maple syrup or warm milk. (It’s not too sweet, so you may want to drizzle on some maple syrup.)

Notes

  • Storing leftovers: Place any leftover baked oatmeal in an airtight container or wrap it in plastic wrap and store it in the fridge for up to 4 days.
  • Freeze: Place individual servings in an airtight, freezer-safe container or freezer-safe bag for up to 3 months.
  • Reheat: Place individual slices in the microwave for about 1 to 4 minutes, depending on whether it’s at room temperature or frozen. You can also rewarm in the oven at 350°F for 15-20 minutes.
