For the Cooked Peaches:

  • 3 cups peaches diced, peeled
  • 3 tablespoons maple syrup
  • 1 teaspoon lemon juice fresh
  • ½-1 teaspoon cinnamon or more

For the Overnight Oats:

  • 2 cups rolled oats
  • 4 tablespoons chia seeds
  • 1-2 tablespoon maple syrup
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 cup yogurt
  • 2 cups milk

Instructions

  1. Add peeled and diced peaches to the saucepan over medium heat, along with 3 tablespoons of maple syrup and cinnamon.
  2. Saute for 4 to 5 minutes or until peaches are tender. Turn off the heat and stir in lemon juice.
  3. Set aside to cool and set aside 1 cup for topping.
  4. Once the cooked peaches have cooled, add the rolled oats, chia seeds, yogurt, milk, vanilla extract, salt, maple syrup, and the cooked peach mixture into a bowl.
  5. Mix until well combined. Cover and put the mixture into the fridge (or individual containers) for at least 4 hours, preferably overnight.
  6. When ready to enjoy, top with the cooked peaches that were set aside. You can reheat the peaches before topping to get them syrupy and warm again.
