Description
The Peach Pie combines fresh, sliced peaches with a blend of white and brown sugars, cinnamon, nutmeg, and flour to thicken the fruit juices during baking. Butter is added for richness. The mixture is layered over a single pastry crust in a 9-inch pie plate, then covered with a second crust featuring vent slits for steam to escape.
An egg wash of beaten egg and water is brushed on the top crust and sprinkled with coarse sanding sugar to create a glossy, crunchy surface once baked. The pie is baked at 350°F (176.6°C) for about 45 minutes until the crust is golden and filling bubbly.
When removed from the oven, the pie is allowed to cool inside to help set the filling. This peach pie highlights the natural sweetness and texture of fresh peaches complemented by warm spices and a flaky crust, making it suitable for dessert or a sweet snack.
Ingredients
- 6 cups peach sliced
- 1/3 cup all-purpose flour
- 3/4 cup white sugar
- 1/4 cup brown sugar packed
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup butter
- 1 pastry dough for a 9 inch double crust pie
- 1 egg
- 1 tablespoon water
- sanding sugar coarse
Instructions
- Preheat oven to 350 degrees F (176.6 degrees C).
- Place one crust in the bottom of a 9 inch pie plate.
- Line the pie crust half the peaches.
- Mix together the butter, sugar, brown sugar, flour, cinnamon and nutmeg with a fork and sprinkle half of it on the peaches.
- Pour over the remaining peaches then sprinkle over the remaining cinnamon mixture.
- Top with second pie crust, then cut two 1" slices into the middle of the crust to vent.
- Beat egg with water and brush onto crust then sprinkle on sanding sugar.
- Bake at 350 degrees for 45 minutes, or until crust is golden.
- Allow pie to cool in oven after you turn it off.
