Peach Salsa

Peach Salsa blends diced peaches with bright lime juice, red bell pepper, red onion, jalapeño, fresh cilantro, olive oil, chili powder, and salt. This combination creates a colorful, sweet-heat salsa with a balance of juicy fruit and mild spice, ideal for tortilla chips or as an accompaniment to grilled chicken or fish. Allowing the salsa to rest before serving enhances flavor melding.

Description

This Peach Salsa begins by tossing diced peaches with fresh lime juice to preserve color and add brightness. Finely diced red bell pepper, red onion, and seeded jalapeño contribute crunch and a spicy kick. Cilantro adds fresh herbaceous notes, while olive oil and chili powder bring body and subtle heat. Salt rounds out the flavors.

The salsa rests for about 15 minutes to allow the ingredients to meld, resulting in a fresh, balanced mixture. The sweet juiciness of the peaches pairs well with the crisp vegetables and smoky spice. It serves well as a dip with tortilla chips or spooned over grilled meats and fish as a fresh topping.

Using frozen or canned peaches is recommended for longer-lasting ingredients and reduced browning, though fresh peaches can be used if consumed the same day. Peeling fresh peaches by blanching helps remove skin if desired.

Ingredients

Servings
  • 2 cups peaches thawed or drained canned peaches, frozen
  • 2 tablespoons lime juice fresh
  • 1 red bell pepper finely diced
  • ¼ cup red onion finely diced
  • 1 jalapeño seeded and minced
  • 3 tablespoons cilantro chopped, fresh
  • ½ tablespoon olive oil
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt more to taste

Instructions

  1. Dice the peaches and add to a bowl. Toss with lime juice.
  2. Add bell pepper, onion, jalapeno, cilantro, olive oil, chili powder, and salt. Toss to combine and let rest 15 minutes before serving.
  3. Serve with tortilla chips or spoon over grilled chicken or fish.

Notes

  • Frozen or canned peaches prevent browning and extend shelf life compared to fresh peaches.
  • Fresh peaches should be eaten the same day and can be peeled by blanching: score an "X", boil 30 seconds, then cool in ice water to remove skin easily.
