Peachy Southern Coleslaw Recipe
Description
This coleslaw uses a combination of green cabbage, purple cabbage, and shredded carrot for a colorful and crunchy base. The dressing is prepared by whisking peach-flavored yogurt with apple cider vinegar for acidity, dried tarragon for herbal brightness, and seasoning with salt and pepper. The creamy dressing contrasts with the crisp vegetables, lending a peachy sweetness and tang.
After combining the dressing with the vegetables, the coleslaw is chilled for 20 minutes to meld flavors and maintain crunch. It serves as a refreshing counterpoint to richer dishes such as pulled pork sandwiches, balancing smoky and savory flavors with cool, tangy freshness.

- 1 cup purple cabbage shredded
- 1 carrot shredded, large
Dressing
- 8 oz yogurt peach
- 2 tbsp apple cider vinegar
