Peanut Butter Banana Bread Recipe

This Peanut Butter Banana Bread blends mashed overripe bananas with creamy peanut butter for a moist, flavorful loaf. A swirl of peanut butter across the top adds visual appeal and concentrated nutty flavor. The bread's texture is soft with a tender crumb, achieved by creaming butter, sugar, and peanut butter, then folding in dry ingredients and bananas before baking in a loaf pan until golden and set.

Description

This recipe begins by creaming sugar, softened butter, and part of the peanut butter until light and fluffy, which helps produce a tender crumb. Eggs, vanilla, and milk are incorporated before folding in flour, salt, baking soda, and baking powder. Mashed overripe bananas add moisture and natural sweetness. A peanut butter swirl created by piping and swirling the remaining peanut butter on top creates a marbled effect and intensifies the peanut flavor.

Once baked at a moderate temperature until a toothpick inserted in the center comes out clean, the bread offers a balance of fruity sweetness from bananas and creamy richness from peanut butter. This loaf works well for breakfast or a snack, pairing well with coffee or tea.

Ingredients

Servings
  • 1 cup sugar
  • ½ cup butter softened, unsalted
  • ½ cup peanut butter divided, creamy
  • 2 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 banana overripe and mashed

Instructions

  1. Preheat the oven to 325°F. Grease a 9 x 5 loaf pan and line with parchment paper, then set aside.
  2. In a large bowl or the bowl of a stand mixer, cream together the sugar, butter, and ¼ cup peanut butter until light and fluffy. Add the eggs, vanilla, and milk, and mix until smooth.
  3. Add the flour, salt, baking soda, and baking powder, and mix until just combined. Fold in the mashed bananas and pour into the prepared loaf pan.
  4. Scoop the remaining ¼ cup peanut butter into a ziplock bag, and cut the corner off the bag. Pipe three lines of peanut butter across the top of the batter, then drag a toothpick or skewer through the batter to swirl the peanut butter.
  5. Bake 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
