Peanut Butter Banana Waffles

Report
Peanut Butter Banana Waffles blend mashed bananas and reconstituted PB2 powder into a batter with cinnamon and baking powder, producing crisp waffles with subtle nutty and fruity flavors. A peanut butter syrup made from PB2 powder and water is drizzled over, often served with whipped cream and banana slices for added sweetness and richness. These waffles offer a unique twist on breakfast waffles with layered peanut and banana tastes.

Description

These Peanut Butter Banana Waffles use all-purpose flour, baking powder, cinnamon, and baking soda to create a leavened batter incorporating mashed bananas and peanut butter powder rehydrated into a creamy consistency. Egg yolks and whipped egg whites provide lift and structure, while coconut oil adds moisture and a mild flavor. Cooking in a waffle iron yields golden brown waffles with a fluffy interior and slight crispness outside.

The peanut butter syrup, made by whisking PB2 powder with water, imparts additional nutty taste once drizzled atop. Serving the waffles with sliced bananas and whipped cream adds contrasting textures and complementary sweetness that highlight the banana and peanut flavors.

For convenience, these waffles can be frozen individually and reheated in a toaster, maintaining their texture and flavor for up to two months.
