Peanut Butter Brownie Baked Oatmeal
Description
This baked oatmeal recipe uses mashed bananas and peanut butter to infuse natural sweetness and richness, while cocoa powder provides a deep chocolate flavor similar to brownies. The wet ingredients including egg, brown sugar, vanilla, and milk are mixed smoothly before stirring in rolled oats, creating a thick batter. Baking transforms the mixture into a tender yet structured casserole.
The cinnamon and salt subtly enhance the flavors, while the topping swirl of peanut butter melts slightly during baking to add texture and extra flavor. It pairs well with milk or yogurt and can be a nutritious breakfast or snack.
The recipe specifies not to substitute steel-cut or quick oats, as old-fashioned rolled oats retain the preferred texture. Leftovers can be refrigerated and reheated gently to maintain moisture and flavor.
Ingredients
- 1.5 cups banana $0.68, mashed, ripe, about 3 medium bananas
- 1 large egg $0.27
- 1/4 cup peanut butter $0.31, natural
- 1/4 cup brown sugar $0.04
- 1 tsp vanilla extract $0.28
- 1/2 tsp salt $0.02
- 1 tsp baking powder $0.06
- 1/2 tsp cinnamon $0.05
- 1/3 cup cocoa powder $0.29, unsweetened
- 2 cups milk $1.12, whole
- 3 cups rolled oats $0.50, old-fashioned
- 2 Tbsp peanut butter $0.15, natural, for topping
Instructions
- Preheat the oven to 375ºF.
- Mash the bananas well, then place them in a large mixing bowl along with the egg, peanut butter, brown sugar, vanilla, salt, baking powder, cinnamon, and cocoa powder. Whisk until the mixture is mostly smooth (there may be small pieces of banana).
- Add the milk to the chocolate banana mixture, and then whisk until smooth again. Add the dry rolled oats and then stir until combined.
- Pour the oat mixture into a 2-3 quart casserole dish coated with non-stick spray. Drizzle the remaining 2 Tbsp peanut butter over the oats and drag a knife through to create swirls. If needed, warm the peanut butter slightly to make it runny enough to drizzle over the oats.
- Bake the oats in the preheated oven for 45 minutes. Serve warm, or refrigerate until ready to eat.
Notes
- Use old-fashioned rolled oats for the best texture; avoid steel-cut or quick oats in this recipe.
- Swirling additional peanut butter on top before baking adds intensity and visually appealing topping.
- Store leftovers in the refrigerator and reheat before serving for a warm breakfast.
