Peanut Butter Chocolate Chip Baked Oatmeal

Peanut Butter Chocolate Chip Baked Oatmeal combines old fashioned oats, vanilla protein powder, ripe banana, and powdered peanut butter for a hearty breakfast baked into a moist, sliceable casserole. Mini chocolate chips add sweet bursts. The baked oatmeal has a soft, tender texture with a subtle peanut butter flavor, finished with a peanut butter drizzle. It yields six servings, ideal for preparing ahead.

Description

This baked oatmeal starts by mixing oats, protein powder, and baking powder dry, then blending mashed banana, melted butter, egg whites, honey, milk, and powdered peanut butter wet. Combining the two and folding in some chocolate chips creates a rich batter. The mixture is baked for 30 to 35 minutes until set and slightly golden. It is then topped with a drizzle made by thinning powdered peanut butter with water.

The banana acts as natural sweetener and binder, while powdered peanut butter adds flavor without excess fat. Mini chocolate chips provide occasional sweetness and texture contrast. The final baked oatmeal cut into six portions offers a warm, creamy, and nutritious start to the day.

The recipe makes enough for six servings, so it's suitable for meal prep or sharing. The peanut butter drizzle adds an extra layer of flavor and moisture.
