Peanut Butter Chocolate Chip Bars

Ingredients
For the bars:
- ½ cup butter room temperature
- ½ cup granulated sugar
- ½ cup light brown sugar
- ½ cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup oatmeal not instant
- 6 ounces chocolate chips
For the glaze:
- ¼ cup creamy peanut butter
- 1 cup confectioner’s sugar
- 4 tablespoons milk
Instructions
- Preheat the oven to 350. Grease a 9x13 baking dish or pan. Set aside.
- Using a hand-held or stand mixer, cream the butter, sugars, and peanut butter. Add the egg and vanilla.
- Sift the flour together with the baking soda and salt. Mix in the oatmeal.
- With the mixer on low speed, gradually beat the flour-oatmeal mixture into the creamed mixture.
- Spread the batter into the prepared baking dish or pan. Sprinkle the chocolate chips evenly over the top of the batter. Bake for 20-25 minutes until browned around the edges.
- Remove from the oven and allow to cool for 10-15 minutes before preparing the glaze.
- Make the glaze by combining the 1/4 cup of peanut butter, confectioner’s sugar, and milk in a small bowl, whisking until smooth. Spread the glaze evenly over the still warm bars.
- Allow to cool completely. Cut into squares and serve.
