Ingredients

  • 1 cup instant oatmeal
  • 1.5 cups peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup coconut flakes sweetened shredded
  • ¼ cup honey
  • ½ cup Barleans Energy Blend Flax, Chia, Coconut, and Panax Ginseng
  • ½ cup mini chocolate chips dairy free

Instructions

  1. Place all the ingredients (minus the chocolate chips) in a stand mixer, fitted with a paddle attachment. Mix on medium-low until mixed together. Then add in the chocolate chips and mix well.
  2. Place in the refrigerator and let rest for at least 30 minutes. Using a cookie scoop, scoop into balls (roll with hands), and place in an airtight container. Repeat until all the batter is rolled. Store in the freezer and enjoy!

Notes

  • These are dairy-free and gluten-free! Keep in mind the energy blend and who you are serving it to. You can use regular protein powder as well.
