Peanut Butter Cookies Recipe

Make these classic peanut butter cookies for your next get together or just to snack on. These cookies are easy and great for any peanut butter fans.

Ingredients
- 1 cup unsalted butter room temperature (2 sticks)
- 1¼ cups creamy peanut butter
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- 1½ teaspoons baking soda
- ¼ cup granulated sugar for rolling

Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
- In a large bowl, with a hand mixer, cream together the butter, peanut butter, brown sugar, and granulated sugar. Mix in the eggs. Set aside.
- In a small bowl, whisk together the flour, baking powder, salt, and baking soda. Pour the flour mixture into the peanut butter mixture and stir until well combined.
- Using a medium cookie scoop or a heaping tablespoon, scoop a ball of cookie dough, lightly roll it into a ball, and toss it into a bowl of granulated sugar to coat. Place the cookie on the prepared baking sheet and use a fork to press the cookie in a criss-cross pattern. Repeat with remaining cookies.
- Bake for 9-10 minutes, or until the edges are lightly browned. Cool on the baking sheet for 2-3 minutes before moving them onto a cooling rack.
Notes
- Storage: Store peanut butter cookies in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 5 days, or in the freezer for up to 1 month.
- You can also press your cookies with the bottom of a drinking glass or a slotted spoon to create a different design.
- You can use chunky peanut butter to create cookies with more texture.
- Feel free to add your favorite chocolate chips or flavored baking chips. I love semisweet chips in my peanut butter cookies!
- You don't have to roll the cookies in sugar. They are tasty with or without!
