Peanut Butter Cookies Recipe

Ingredients

  • 1 cup unsalted butter room temperature (2 sticks)
  • cups creamy peanut butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • teaspoons baking soda
  • ¼ cup granulated sugar for rolling

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper. Set aside.
  2. In a large bowl, with a hand mixer, cream together the butter, peanut butter, brown sugar, and granulated sugar. Mix in the eggs. Set aside.
  3. In a small bowl, whisk together the flour, baking powder, salt, and baking soda. Pour the flour mixture into the peanut butter mixture and stir until well combined.
  4. Using a medium cookie scoop or a heaping tablespoon, scoop a ball of cookie dough, lightly roll it into a ball, and toss it into a bowl of granulated sugar to coat. Place the cookie on the prepared baking sheet and use a fork to press the cookie in a criss-cross pattern. Repeat with remaining cookies.
  5. Bake for 9-10 minutes, or until the edges are lightly browned. Cool on the baking sheet for 2-3 minutes before moving them onto a cooling rack.

Notes

  • Storage: Store peanut butter cookies in an airtight container at room temperature for up to 3 days, in the refrigerator for up to 5 days, or in the freezer for up to 1 month.
  • You can also press your cookies with the bottom of a drinking glass or a slotted spoon to create a different design.
  • You can use chunky peanut butter to create cookies with more texture.
  • Feel free to add your favorite chocolate chips or flavored baking chips. I love semisweet chips in my peanut butter cookies!
  • You don't have to roll the cookies in sugar. They are tasty with or without!
