Peanut Butter Cottage Cheese Toast with Fresh Berries is a quick and healthy breakfast idea packed with protein and super easy to make.

Ingredients

  • 2 Ezekiel bread or any other bread you prefer, sliced, toasted
  • 2 tablespoons peanut butter creamy, separated
  • 4 tablespoons cottage cheese separated
  • 1 raspberry 130 grams, heaping cup, fresh
  • honey drizzle

Instructions

  1. Spread each toasted slice of bread with one tablespoon of peanut butter. Make sure to cover the corners.
  2. Spread two tablespoons of cottage cheese over each toast on top of the peanut butter.
  3. Divide the fresh berries on top of the cottage cheese. I use whole berries, but you can crush the berries in advance and top it that way.
  4. Drizzle a tad of honey over the berries. A teaspoon per toast should be enough but adjust to taste.

  • Variations:
  • Use different fruits like blueberries or banana slices as a topping.
  • Try crunchy instead of creamy peanut butter.
  • Try hot honey for a spicy touch.
  • Switch it up with ricotta cheese instead of cottage cheese.
  • Sprinkle with extra seeds or nuts on top.
