Peanut Butter Granola

Granola gets a little sweeter with the addition of peanut butter! Also made with agave syrup, coconut oil, peanuts, and oats this granola is toasted to perfection and makes a great addition to parfaits, yogurt, and more!

Ingredients
- ½ cup peanut butter
- ½ cup agave
- 2 tablespoons coconut oil melted
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 cups old fashioned oats
- 1 cup chopped peanuts
Instructions
- Preheat the oven to 325°F.
- Line a baking sheet with parchment paper and set it aside.
- In a medium-sized microwave-safe bowl, whisk together peanut butter, agave, melted coconut oil, salt, and vanilla.
- Microwave for 20 seconds and whisk again.
- In a large mixing bowl, mix together oats & nuts until fully combined.
- Pour the peanut butter mixture into the oat mixture and fold together using a rubber spatula, covering all pieces of nuts and oats.
- Spread the granola evenly on the prepared baking sheet and bake for 20 minutes.
- Remove from the oven, rotate the granola, and return to the oven for 10 minutes.
- Remove from the oven and let cool for 1 to 2 hours.
Notes
- Agave can be substituted for maple syrup or honey, although those flavors may be stronger than agave. Use old-fashioned oats over 1-minute oats or 3-minute oats as they will become too soft. Peanuts can be swapped for a different nut or omitted altogether.
