Peanut Butter Granola

Peanut Butter Granola blends creamy peanut butter, honey, coconut oil, and vanilla with rolled oats and chopped, toasted nuts. The mixture is baked until crisp, then cooled before optional mini chocolate chips are stirred in. This granola offers a crunchy, lightly sweetened texture with a nutty flavor and hints of vanilla and salt, making it a satisfying snack or breakfast topping.

Description

This Peanut Butter Granola combines peanut butter and honey with vanilla and coconut oil to coat rolled oats and chopped toasted nuts. The mixture is spread on a parchment-lined baking sheet and baked to develop a crunchy texture. Cooling the granola allows it to crisp further before mini chocolate chips are folded in, adding a bit of sweetness and contrast to the nutty base. The salt balances the flavors subtly.

The granola can be adjusted by removing or substituting nuts and chocolate chips, allowing customization while maintaining the overall quantity and texture. This flexibility makes it suitable for various preferences, whether nut-free or with extra mix-ins like cacao nibs or seeds.

Stored in an airtight container at room temperature, the granola stays fresh up to two weeks, making it convenient for snacking over several days.

Ingredients

Servings
  • cup peanut butter creamy
  • cup honey or pure maple syrup
  • 1 teaspoon vanilla
  • 2 tablespoons coconut oil
  • Pinch salt
  • 1 cup nut chopped toasted; almonds, peanuts, etc
  • 3 cups rolled oats old-fashioned
  • ½ cup mini chocolate chips optional

Instructions

  1. Preheat the oven to 325 degrees F.
  2. Line a large, rimmed baking sheet with parchment paper and lightly grease the parchment with nonstick cooking spray.
  3. in a bowl (for the microwave) or in a saucepan (for the stove), combine the peanut butter, honey, vanilla, coconut oil and salt. Melt over low heat until the ingredients are smooth and well-combined.
  4. In a large bowl, toss together the nuts and oats.
  5. Pour the peanut butter mixture over the dry ingredients, stirring with a wooden spoon until evenly coated - the overall granola mixture won't be overly wet once combined so don't fret.
  6. Spread the granola into an even layer on the prepared baking sheet.
  7. Bake for 15-20 minutes, tossing once or twice during the baking time.
  8. Let the granola cool on the baking sheet (it will get crispier as it cools). If desired, stir the mini chocolate chips into the granola after it has cooled completely. Store in an airtight container at room temperature for up to two weeks.

Notes

  • You can omit nuts or mini chocolate chips or swap in other ingredients like cacao nibs or seeds while keeping similar quantities for balance.
  • Store granola in an airtight container at room temperature for up to two weeks to maintain crispness.
