Peanut Butter Granola Bars
Description
This recipe begins by melting peanut butter, corn syrup or an alternative liquid sweetener, and optional light brown sugar together, gently warming to combine. After adding vanilla and cinnamon, quick oats, rice crispy-type cereal, dried cranberries (or other dried fruits), and vegan chocolate chips are stirred in once the mixture cools enough to avoid melting the chocolate.
The mixture is pressed firmly into a parchment-lined pan to create a compact, evenly thick layer, then chilled in the freezer for about an hour to set. Once firm, the slab is cut into bars. These bars balance creamy peanut butter sweetness with chewy fruit, crispy cereal, and bursts of chocolate.
They make a convenient snack or lunchbox treat and can be customized with different add-ins to suit preferences or use what’s on hand.
Ingredients
- ½ cup peanut butter creamy or crunchy
- ⅔ cup light corn syrup or agave or maple syrup
- 2 tablespoons light brown sugar (optional if you want it sweeter)
- 1 teaspoon of vanilla
- 1 teaspoon cinnamon
- 2 cups quick oats
- 2 cups Os cereal or rice crispies cereal
- ¼ cup dried cranberries sub in any dried fruit you like, or raisins
- ¼ cup chocolate chips vegan
Instructions
- First, line a 9x9-inch (or 8x8) baking dish with parchment paper, leaving overhang on two sides for easier removal.
- Then, combine the peanut butter, liquid sweetener, and brown sugar (if using) in a microwave-safe bowl and microwave for a minute. Stir well and microwave for a further minute, if needed, to melt the brown sugar.You only need to heat the mixture until it mixes into a cohesive mixture.
- Then, working one at a time, stir in the vanilla, cinnamon, oats, cereal, dried fruit, and finally, the chocolate chips (only once the mixture has cooled; otherwise, they’ll melt).
- Pour the mixture into the dish, cover it with a layer of parchment paper, and press it with your hands or the bottom of a wide cup into a compact, even layer.
- Transfer it to the freezer for an hour to set before finally removing it from the pan and cutting it into your preferred size peanut butter chocolate granola bars.
Notes
- If you lack a microwave, melt the peanut butter and sweetener slowly in a saucepan over low heat.
- Press the mixture firmly into the pan to ensure bars hold together well after setting.
- Feel free to customize with up to 1 ½ cups of different mix-ins like nuts, seeds, or alternative dried fruits.
