Peanut Butter Oatmeal Bars [Flapjacks]

These Peanut Butter Oatmeal Bars combine quick oats with peanut butter and a syrup-sweetened vegan butter mix to form chewy, textured flapjacks. The mixture is pressed compactly and baked to set, creating bars with a balance of sweetness from turbinado sugar and golden syrup, complemented by warm cinnamon and a hint of salt. Drizzling extra melted peanut butter on top adds richness and visual appeal, making them suitable for snacking or a quick energy boost.

Description

Peanut Butter Oatmeal Bars [Flapjacks] are a baked oat treat made by coating quick oats with a melted blend of vegan butter, turbinado sugar, and golden syrup, then folding in peanut butter. Pressed firmly into a pan, this mixture bakes to create bars with a dense, chewy consistency. The cinnamon adds a subtle warmth, while optional salt enhances the overall flavor. After baking, the bars are cooled before slicing, and an additional drizzle of melted peanut butter can be added as a garnish for extra flavor and moisture.

The texture hinges on baking time; shorter times yield softer, chewier bars, while longer baking crisps them up. Using a firm press into the baking pan before cooking helps maintain a compact structure that holds together well when cut. These bars offer a satisfying combination of oat chewiness and peanut butter creaminess, suited for a handheld snack.

This recipe uses common pantry ingredients and requires only modest preparation, making it convenient for batch cooking. The use of golden syrup or alternatives like maple syrup allows slight customization in sweetness and flavor. They can be enjoyed at room temperature and work well as a portable snack or light breakfast option.

Be careful during the melting step to only heat until the vegan butter has just melted along with combined ingredients to avoid separation. Press the mixture firmly into the pan to ensure compactness before baking.

Ingredients

Servings
  • ¼ cup vegan butter
  • ¼ cup turbinado sugar
  • cup golden syrup (or sub maple syrup or agave)
  • ¼ teaspoon salt (optional — only use if you’re using unsalted vegan butter)
  • ½ teaspoon cinnamon
  • 2 cups quick oats
  • ½ cup peanut butter plus more for garnish, melted

Instructions

  1. Preheat the oven to 325 degrees F. and line a 9x9 baking pan with parchment paper. Set aside.
  2. In a small saucepan, mix the vegan butter, sugar, syrup, and salt. Mix just until the vegan butter is melted. Do not over mix.
  3. In a large bowl, combine the cinnamon and oats, then add the vegan butter mixture. Mix well until the oats are fully coated with the mixture.
  4. Add the peanut butter to the mixture and mix until fully incorporated. It will take some effort.
  5. Put the mixture on the baking pan and press it with your hand until you have a very compact even layer.
  6. Bake for 15 minutes.
  7. Remove it from the oven and place it on a cooling rack for 30 minutes. Remove it from the baking pan and cut it into the desired size.
  8. Drizzle some more peanut butter as garnish.

Notes

  • Melt the vegan butter mixture gently over low heat to avoid separation of ingredients.
  • Firmly pack the oat mixture into the baking pan to keep bars compact and hold shape after baking.
  • Adjust baking time to control texture: shorter for softer, chewier bars; longer for crunchier ones.
