Ingredients

  • 1 ½ cups quick cooking oats
  • cup vanilla flavored protein powder
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • cup honey
  • 1 egg at room temperature
  • ½ cup peanut butter
  • 1 teaspoon vanilla extract
  • cup semi-sweet mini chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Line a baking tray with parchment paper and set it aside.
  2. In a bowl, combine the dry ingredients: oats, protein powder, baking powder, baking soda, and salt. Set the mixture aside.
  3. In another bowl, combine the honey and egg, and whisk vigorously until well blended.
  4. Add the peanut butter and vanilla extract to the bowl with the honey and egg mixture. Mix until all the ingredients are well combined.
  5. Gradually add the oat mixture to the wet ingredients, mixing in batches until the entire mixture is fully incorporated.
  6. Fold in the chocolate chips, ensuring they are evenly distributed throughout the cookie dough.
  7. Using an ice cream scoop or a tablespoon, scoop the cookie dough onto the prepared baking tray. Leave about 2 inches of space between each cookie to allow for spreading.
  8. Bake the cookies in the preheated oven for 9-10 minutes, or until they are lightly golden. Keep an eye on them to prevent over-baking.
  9. Once the cookies are done, remove them from the oven and let them cool for about 10 minutes on a cooling rack. This will allow them to firm up slightly.
  10. Serve the cookies while still warm and enjoy them with a glass of milk.

Notes

  • To store: Leftover cookies can be stored at room temperature for 2 to 3 days and in an airtight container in the fridge for up to about 1 week.
  • To freeze: Once completely cooled, transfer cookies to an airtight container or freezer-safe bag and store them in the freezer for up to 2 months. When you’re ready to enjoy, thaw at room temperature or heat in the microwave!
