Description
This recipe starts by blending creamy peanut butter with non-fat dried milk and a sweetener like Truvia to create a smooth base. Crushed pretzels are folded in for texture, and the mixture is chilled in the freezer to firm up. After portioning into small balls, the bites return to the freezer for further setting.
Dark chocolate chips, melted with coconut oil, form a coating that is used to dip each peanut butter ball before they harden again in the refrigerator. A sprinkle of crushed pretzels on top adds extra crunch and decorative contrast. The final product combines sweet, salty, creamy, and crunchy elements in a convenient size.
The bites can be stored in an airtight container either in the refrigerator or freezer, making them easy to keep ready for snacking. Freezing helps maintain their firmness for a refreshing texture.
Ingredients
- 1 cup peanut butter creamy (I used Adams, natural
- 1/3 cup non-fat dried milk
- 1 tablespoon truvia sweetener or your favorite sweetener
- 1 cup pretzels crushed
- 1 cup dark chocolate 63% baking chips, extra dark
- 1 teaspoon coconut oil
Instructions
- In a medium bowl mix together peanut butter, dried milk, sweetener until well blended. Fold in crushed pretzels and place in the freezer for at least 30 minutes.
- Remove from freezer and scoop about a tablespoon of dough and roll with your hands into 1/2-1 inch balls. Place on baking sheet lined with parchment paper. Put back in the freezer for another 30 minutes.
- In the meantime, melt the chocolate with the coconut oil over a double boiler or in the microwave (stir every 30 seconds) until smooth.
- Dip each peanut butter ball in the chocolate and after coating the balls place on parchment paper. Garnish with crushed pretzels and let chocolate coating harden in the refrigerator. Once set enjoy!
- Store in the refrigerator or freezer in an airtight container.
