Description

The Peanut Butter Protein Cookie Dough Bites mix creamy peanut or cashew butter, honey or maple syrup, vanilla extract, unflavored protein powder, oat flour, and flaxseed meal to form a soft, doughy mixture similar to cookie dough. Mini chocolate chips add bursts of sweetness, while Maldon sea salt sprinkled on top enhances the overall flavor profile. After forming the dough into small balls, chilling them for an hour allows the ingredients to bind and the texture to firm up. These bites can be stored in the refrigerator for up to a week or frozen for longer freshness. Their balance of protein and sweetness makes them suitable for a quick energy boost or a healthier dessert option.

  • ½ cup peanut butter creamy natural, 128g, or cashew butter (just nuts and salt
  • ¼ cup honey 80g, or pure maple syrup
  • 1 teaspoon vanilla extract
  • ½ cup protein powder unflavored, 40g (used Vital protein collagen peptides
  • 3 tablespoons oat flour 18g, plus more as necessary
  • 1 tablespoon flaxseed meal
  • 3 tablespoons chocolate chips mini (regular is fine, too
  • sea salt Maldon, for sprinkling

Instructions

  1. In a large bowl, add all of the ingredients except for the chocolate chips and salt. Mix together until ingredients are well combined and it resembles cookie dough. If it is too wet add another tablespoon of oat flour. Fold in chocolate chips. Note: Sometimes I use my hands to mix them into the batter more easily!
  2. Use a small cookie scoop to grab dough, then roll into balls and place on a plate. Repeat with remaining dough batter, placing 1 inch apart. Sprinkle with flaky salt, if desired then chill the balls in the fridge for 1 hour. Once cold, you can keep them in an airtight container for up to 1 week in the fridge. Alternatively, store in the freezer for up to 3 months. Enjoy whenever you need a sweet treat. Makes approximately 10 cookie dough bites.

Notes

  • You can substitute any natural nut butter containing only nuts and salt for the peanut butter.
  • Using different protein powders may slightly affect the texture but the recipe should still work well.
  • Optionally, dip the bites in melted chocolate for added sweetness.
